Ingredienti per 6 Muffin
• 100 g di farina tipo 00
• 70 g di piselli surgelati (ancora meglio se freschi)
• 70 g di prosciutto cotto a cubetti
• 50 g di parmigiano grattugiato
• un cucchiaino di lievito per torte salate
• un uovo medio
• 30 g di olio di oliva
• 80 g di yogurt bianco intero
• sale q.b.

Primo passo: la pastella
Miscela fra loro gli ingredienti liquidi, quindi sbatti le uova e aggiungi l’olio e lo yogurt. In una terrina mescola la farina setacciata con il lievito, il sale e il parmigiano.

Secondo passo: il composto
Unisci la pastella liquida e mescola con un frusta per ottenere un composto omogeneo (se fosse troppo sodo puoi aggiungere uno o due cucchiai di latte). Incorpora anche i piselli sciacquati e asciugati e i cubetti di prosciutto.
Amalgama bene il tutto, quindi distribuisci il composto nei pirottini per muffin.

Terzo passo: cottura
Cuoci i muffin prosciutto e piselli a 180 gradi per circa 30 minuti, sfornali, lasciali intiepidire e servi. Decorazioni a tua scelta.
